Easy Shrimp Scampi

Ingredients

The shrimp

  • 1 lb Extra large shrimp (peeled and deveined, preferably with tails on)

The aromatics

  • 4 cloves Garlic (minced)
  • 1 medium Shallot (minced)
  • ¼ tsp Crushed red pepper flakes
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

The sauce

  • ¼ cup Dry white wine (or chicken broth)
  • ¼ cup Unsalted butter
  • 2 tbsp Lemon juice

The finishing touches

  • 2 tbsp Fresh parsley (chopped; optional)
  • 2 tbsp Olive oil

Instructions

  1. Pat the shrimp dry and set aside.
  2. Heat olive oil in a skillet over medium heat.
  3. Add shallots, garlic, and red pepper flakes; sauté until shallots are translucent.
  4. Add shrimp, season with salt and pepper, and sauté until slightly undercooked; remove and set aside.
  5. Deglaze the pan with wine or broth, scraping the bottom, and simmer until reduced by half.
  6. Stir in butter and lemon juice; return shrimp to the pan and simmer until fully cooked.
  7. Adjust seasoning if necessary and stir in parsley before serving.
