Instructions
- Preheat the oven to 350°F and coat a donut pan with cooking spray.
- Soak the dates in boiling water for 10-15 minutes, then chop into a thick paste.
- Beat the eggs until fluffy, then mix in brown sugar, applesauce, oil, and vanilla extract.
- Combine the date paste with the wet ingredients until mixed.
- In a separate bowl, whisk together flour, baking powder, cinnamon, and salt, then mix into the wet ingredients.
- Fold in the diced apple gently.
- Pipe the batter into the donut pan and bake for 12-15 minutes until set.
- For the cinnamon sugar, mix cinnamon and sugar together and coat the donuts.
- For the frosting, soak more dates in boiling water, then blend with coconut oil, peanut butter, vanilla, and salt until smooth, adding milk as needed.
- Spread or dip the donuts in the frosting.
