Ingredients

The donuts

  • 1 cup pitted Medjool dates
  • ½ cup boiling water
  • 2 large eggs
  • ½ cup brown sugar
  • ½ cup unsweetened applesauce

  • 1 ½ teaspoons pure vanilla extract
  • 1 ¼ cups flour
  • 2 ½ teaspoons baking powder
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon coarse salt
  • ½ medium apple

Cinnamon sugar topping

  • 2 tablespoons ground cinnamon
  • 1 tablespoon granulated sugar

Date frosting

  • ¼ cup pitted Medjool dates
  • ¼ cup boiling water
  • 2 tablespoons coconut oil
  • 1 tablespoon creamy peanut butter
  • ¼ teaspoon pure vanilla extract
  • 1 pinch coarse salt
  • ¼ cup milk

Instructions

  1. Preheat the oven to 350°F and coat a donut pan with cooking spray.
  2. Soak the dates in boiling water for 10-15 minutes, then chop into a thick paste.
  3. Beat the eggs until fluffy, then mix in brown sugar, applesauce, oil, and vanilla extract.
  4. Combine the date paste with the wet ingredients until mixed.
  5. In a separate bowl, whisk together flour, baking powder, cinnamon, and salt, then mix into the wet ingredients.
  6. Fold in the diced apple gently.
  7. Pipe the batter into the donut pan and bake for 12-15 minutes until set.
  8. For the cinnamon sugar, mix cinnamon and sugar together and coat the donuts.
  9. For the frosting, soak more dates in boiling water, then blend with coconut oil, peanut butter, vanilla, and salt until smooth, adding milk as needed.
  10. Spread or dip the donuts in the frosting.
