Ingredients

The muffins

  • 1 large apple, diced small
  • 1 tablespoon butter
  • 1 ¾ cups flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon fresh ground nutmeg
  • ½ teaspoon cinnamon
  • cup olive oil
  • ¾ cup sugar
  • 1 large egg
  • ¾ cup milk (or nut milk)

The brown butter topping

  • ¼ cup butter
  • cup white sugar
  • 1 tablespoon cinnamon

Instructions

  1. Heat butter in a skillet and sauté diced apples until tender.
  2. In a bowl, mix flour, baking powder, salt, nutmeg, and cinnamon.
  3. In another bowl, combine oil, sugar, egg, and milk.
  4. Add dry ingredients to wet ingredients and stir to combine, then fold in apples.
  5. Pour the mixture into greased molds or muffin tins.
  6. Bake at 350°F for 15-20 minutes until a toothpick comes out clean.
  7. For the topping, brown the butter in a pot until golden and fragrant.
  8. Mix sugar and cinnamon in a bowl.
  9. Remove muffins from tins while hot, dip in brown butter, and roll in the sugar-cinnamon mix.
  10. Let cool.
