Instructions
- Heat butter in a skillet and sauté diced apples until tender.
- In a bowl, mix flour, baking powder, salt, nutmeg, and cinnamon.
- In another bowl, combine oil, sugar, egg, and milk.
- Add dry ingredients to wet ingredients and stir to combine, then fold in apples.
- Pour the mixture into greased molds or muffin tins.
- Bake at 350°F for 15-20 minutes until a toothpick comes out clean.
- For the topping, brown the butter in a pot until golden and fragrant.
- Mix sugar and cinnamon in a bowl.
- Remove muffins from tins while hot, dip in brown butter, and roll in the sugar-cinnamon mix.
- Let cool.
