Vegan Maple Cream Cheese Frosting

Ingredients

  • 1 ½ cups raw cashew halves
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons melted coconut oil or melted vegan butter
  • ⅓ to ½ cup maple syrup
  • 4 tablespoons canned coconut milk/cream
  • 1 teaspoon ground cinnamon (optional)
  • 1 teaspoon lemon juice or 2 teaspoons apple cider vinegar
  • a dash sea salt
  • 2 to 4 tablespoons powdered sugar (optional for thicker frosting)

Instructions

  1. Soak the cashews in boiling water for 1 to 2 hours or in room temperature water for 8 to 24 hours.
  2. Drain the water and blend the cashews with the vanilla extract and coconut oil in a food processor for 5 minutes, scraping the sides as needed.
  3. Add the maple syrup, canned coconut milk, optional cinnamon, lemon juice, and salt, then blend until the mixture is thick and frosting-like.
  4. Chill the frosting in the fridge for at least 1 hour before using, allowing it to sit at room temperature for 20 minutes before spreading.
