Cream Cheese Frosting (Paleo, Vegan)

Ingredients

  • 1 cup raw cashews
  • ¼ cup refined coconut oil
  • ¼ cup honey or maple syrup or ⅓ cup liquid allulose
  • 3 tablespoons coconut cream
  • 3 tablespoons freshly squeezed lemon juice
  • ½ teaspoon vanilla extract
  • teaspoon Diamond Crystal kosher salt

Instructions

  1. Soak the cashews in cool water for 2 to 4 hours, or in boiling water for about 20 minutes, then drain.
  2. Blend the soaked cashews with the other frosting ingredients until very smooth.
  3. Transfer the frosting to an airtight container and chill in the fridge until stiff, about 3 hours to a day.
  4. Once chilled, spread the frosting on your favorite desserts.
