Ingredients

The salad

  • 1 pound short pasta noodles
  • 1 pound bacon
  • 1 pint cherry tomatoes
  • 2 cups arugula leaves
  • 1 whole avocado
  • ¼ cup red onion

The dressing

  • ½ cup plain Greek yogurt
  • ½ cup mayonnaise
  • 2 tablespoons white vinegar
  • 1 tablespoon fresh minced chives
  • 1 tablespoon fresh minced parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

Instructions

  1. Cook the pasta in salted water until al dente, then drain and rinse with cool water.
  2. Chop the bacon and cook it in a skillet until crispy, then drain on paper towels.
  3. In a large bowl, combine the cooked pasta, bacon, cherry tomatoes, arugula, avocado, and red onion.
  4. In a separate bowl, whisk together the Greek yogurt, mayonnaise, vinegar, chives, garlic powder, salt, and pepper.
  5. Pour the dressing over the pasta salad and gently toss to combine.
