Avocado BLT Pasta Salad

Ingredients

  • 8 oz uncooked pasta
  • 8 slices center cut bacon
  • 6 oz avocado, mashed
  • 1 ½ teaspoons lemon juice
  • ¼ cup low fat mayonnaise
  • 1 ½ teaspoons apple cider vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • 1 cup chopped cherry tomatoes
  • 2 cups shredded or thinly sliced romaine or green leaf lettuce

Instructions

  1. Cook the pasta according to package directions, then drain and rinse under cold water to cool.
  2. Cook the bacon according to package directions, then drain and cool on paper towels before slicing or crumbling.
  3. In a mixing bowl, combine mashed avocado and lemon juice, stirring until smooth. Then add mayonnaise, vinegar, salt, and garlic powder, mixing until creamy.
  4. Add the avocado dressing to the cooled pasta and stir to coat.
  5. Toss in the crumbled bacon, chopped tomatoes, and shredded lettuce. Serve chilled or at room temperature.
