Ingredients

The cheese base

  • ½ cup raw cashews
  • ¼ cup sun-dried tomatoes, sliced
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt (optional)
  • 1 tablespoon nutritional yeast
  • 1 clove garlic
  • 1 lemon juiced
  • ¼ cup plant-based milk, plain, unsweetened

Soaking water

  • Boiling water

Instructions

  1. Soak raw cashews in water overnight in the refrigerator or use boiling water for 15 minutes.
  2. Drain the water from the soaked cashews.
  3. Blend the soaked cashews with sun-dried tomatoes, smoked paprika, nutritional yeast, garlic, lemon juice, and plant-based milk until smooth and creamy.
  4. Adjust the texture with additional plant-based milk if necessary.
