Ingredients

The salad

  • 1 large head romaine lettuce
  • 1 cup cherry tomatoes
  • 1 large cucumber
  • ¾ cup shredded carrot
  • 5 large hard-boiled eggs
  • 2 cups cubed mild cheddar cheese
  • 2 cups cubed ham

The dressing

  • ½ cup plain Greek yogurt
  • ¼ cup extra virgin olive oil
  • ¼ cup Dijon mustard
  • 4 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh squeezed orange juice
  • 2 cloves garlic
  • 2 tablespoons shallots
  • to taste sea salt and pepper

Instructions

  1. Whisk together the yogurt, olive oil, mustard, honey, vinegar, lemon juice, orange juice, garlic, shallots, salt, and pepper in a large mixing bowl.
  2. Assemble the salad in individual bowls or a large serving bowl and top with the dressing.
