Instructions
- Combine soy sauce, mirin, sake, and rice vinegar in a bowl.
- Transfer the mixture to a pot and boil for 2 minutes.
- Let the mixture cool and refrigerate for at least 8 hours.
- Combine 1 cup of the chilled marinade with 1 tablespoon of ume paste to create the dipping sauce.
- Let the steak sit at room temperature for 30 minutes.
- Drizzle the steak with olive oil and season generously with salt and pepper.
- Preheat the grill to 500 degrees for direct heat.
- Grill each side of the steak for 2 minutes until sear marks appear.
- Remove the steak from the grill when it reaches an internal temperature of 130 degrees.
- Let the steak rest for 10 minutes before slicing into ⅛-inch pieces.
- Serve the sliced steak with Ume Gyu Dare Sauce for dipping.
