Ingredients

The steak

  • 2 steaks Snake River Farms American Wagyu Denver Steaks
  • 1–2 tbsp kosher sea salt
  • 1 tbsp fresh ground black pepper
  • 1 cup Gyu Dare Dipping Sauce
  • 1 tbsp Ume Paste

Ume Gyu Dare Dipping Sauce

  • ¾ cup soy sauce
  • ½ cup sake
  • ½ cup mirin
  • ¼ cup rice vinegar

Instructions

  1. Combine soy sauce, mirin, sake, and rice vinegar in a bowl.
  2. Transfer the mixture to a pot and boil for 2 minutes.
  3. Let the mixture cool and refrigerate for at least 8 hours.
  4. Combine 1 cup of the chilled marinade with 1 tablespoon of ume paste to create the dipping sauce.
  5. Let the steak sit at room temperature for 30 minutes.
  6. Drizzle the steak with olive oil and season generously with salt and pepper.
  7. Preheat the grill to 500 degrees for direct heat.
  8. Grill each side of the steak for 2 minutes until sear marks appear.
  9. Remove the steak from the grill when it reaches an internal temperature of 130 degrees.
  10. Let the steak rest for 10 minutes before slicing into ⅛-inch pieces.
  11. Serve the sliced steak with Ume Gyu Dare Sauce for dipping.
