Blueberry, Brie and Lemon Curd Grilled Cheese

Instructions
- Cook blueberries with water and sugar in a saucepan until juicy.
- Spread butter on one side of each bread slice.
- Layer brie, lemon curd, and blueberries on the unbuttered side of two slices.
- Top with the other slices of bread, buttered side out.
- Grill the sandwiches in a skillet until toasted and cheese melts, about 2-3 minutes per side.
- Serve immediately, cutting in half if desired.
