Ingredients

  • 10 tablespoons unsalted butter
  • 1 ¼ cups cane sugar
  • ¾ cup natural unsweetened cocoa powder
  • ½ teaspoon fine sea salt
  • ¼ teaspoon baking powder
  • ½ teaspoon espresso powder or finely ground coffee (optional)
  • 2 large cold eggs
  • 1 ½ teaspoons vanilla extract
  • cup white whole wheat flour or flour of choice
  • 2 ounces dark or semi-sweet chocolate, roughly chopped, or ⅓ cup chocolate chips

Instructions

  1. 1. Preheat the oven to 325°F and prepare an 8-inch square baking pan with parchment paper.
  2. 2. Melt the butter in a saucepan over medium heat, whisking until it turns golden brown.
  3. 3. Stir in the sugar, cocoa powder, sea salt, baking powder, and espresso powder until combined. Let cool for 5 minutes.
  4. 4. Add eggs one at a time, mixing vigorously after each addition until thick and shiny.
  5. 5. Mix in vanilla extract and flour until no streaks remain, then beat for 50 strokes.
  6. 6. Fold in the chocolate chunks or chips.
  7. 7. Spread the batter in the prepared pan and swirl the top lightly.
  8. 8. Bake for about 25 minutes, until a toothpick comes out mostly clean.
  9. 9. Cool in the pan before transferring to a cutting board and slicing into squares.
