Instructions
- Preheat the oven to 500°F with a pizza stone on the bottom rack.
- Blend the white beans, water, lemon juice, nutritional yeast, garlic, truffle oil, salt, and pepper until smooth.
- Boil water in a large saucepan and blanch the chopped broccoli rabe for 1 minute, then drain and cool.
- In the same saucepan, heat olive oil and sauté the shiitake mushrooms with smoked paprika and garlic until soft.
- Dust a surface and pizza peel with flour or use parchment paper to stretch the pizza dough into a 12-inch circle.
- Spread the truffle white sauce over the dough and top with broccoli rabe, shiitake mushrooms, shallots, pepperoncini, sun dried tomatoes, and oregano.
- Transfer the pizza onto the hot stone in the oven and bake for 7 minutes.
- Rotate the pizza and bake for an additional 5 minutes until the crust is browned.
- Drizzle with olive oil before slicing and serving.
