Spicy Vegan White Pizza

Ingredients

Truffle White Sauce

  • ¾ cup cooked white beans
  • 2 tablespoons water
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon nutritional yeast
  • 1 clove garlic
  • ¼ teaspoon white truffle oil
  • to taste sea salt
  • to taste ground black pepper

Toppings & Assembly

  • ½ bunch broccoli rabe
  • 1 tablespoon olive oil
  • 6 oz shiitake mushrooms
  • ¾ teaspoon smoked paprika
  • 1 clove garlic
  • 1 lb pizza dough
  • to dust flour flour of choice
  • 1 small shallot
  • 3-4 pickled pepperoncini peppers
  • ¼ cup sun dried tomatoes
  • 1 sprig oregano

Instructions

  1. Preheat the oven to 500°F with a pizza stone on the bottom rack.
  2. Blend the white beans, water, lemon juice, nutritional yeast, garlic, truffle oil, salt, and pepper until smooth.
  3. Boil water in a large saucepan and blanch the chopped broccoli rabe for 1 minute, then drain and cool.
  4. In the same saucepan, heat olive oil and sauté the shiitake mushrooms with smoked paprika and garlic until soft.
  5. Dust a surface and pizza peel with flour or use parchment paper to stretch the pizza dough into a 12-inch circle.
  6. Spread the truffle white sauce over the dough and top with broccoli rabe, shiitake mushrooms, shallots, pepperoncini, sun dried tomatoes, and oregano.
  7. Transfer the pizza onto the hot stone in the oven and bake for 7 minutes.
  8. Rotate the pizza and bake for an additional 5 minutes until the crust is browned.
  9. Drizzle with olive oil before slicing and serving.
