Simple Vegan Pizza

Ingredients

The pizza

  • ½ of one Trader Joe’s garlic-herb pizza crust
  • ½ cup red bell pepper (loosely chopped)
  • ½ cup green bell pepper (loosely chopped)
  • ½ cup orange bell pepper (loosely chopped)
  • cup red onion (chopped)
  • 1 cup button mushrooms (chopped)
  • ½ tsp dried or fresh basil
  • ½ tsp oregano
  • ½ tsp garlic powder
  • ¼ tsp sea salt

The sauce

  • 1 15-ounce can tomato sauce
  • ½ tsp dried or fresh basil
  • ½ tsp oregano
  • ½ tsp garlic powder
  • ½ tsp granulated sugar
  • ¼ tsp sea salt (to taste)

The toppings

  • ½ cup vegan parmesan cheese
  • to taste red pepper flake
  • to taste dried oregano

Instructions

  1. Preheat the oven to 425°F (218°C) and position a rack in the middle.
  2. Heat a large skillet over medium heat and add olive oil, onion, and peppers. Season with salt and herbs, and cook until soft and slightly charred, about 10-15 minutes, adding mushrooms in the last few minutes.
  3. Prepare the sauce by mixing tomato sauce with seasonings and salt to taste. Adjust as needed.
  4. Make vegan parmesan by blending raw cashews, sea salt, nutritional yeast, and garlic powder until fine. Store in a jar in the refrigerator.
  5. Roll out the dough on a floured surface and transfer to a parchment-lined baking sheet.
  6. Top the dough with tomato sauce, a sprinkle of parmesan cheese, and sautéed veggies.
  7. Slide the pizza (with parchment) onto the oven rack and bake for 17-20 minutes until crisp and golden brown.
  8. Serve with remaining parmesan cheese, dried oregano, and red pepper flake. Enjoy cold if there are leftovers.
