Sweet Potato Chicken Sausage Egg Bake

Ingredients

  • 1 Tbsp. cooking fat of choice
  • 1 small sweet potato, peeled and cubed
  • cups quartered Brussels sprouts
  • ½ small red onion, diced or sliced
  • 2–3 cloves garlic, minced
  • 2 pieces chicken sausages, sliced
  • 8 whole eggs
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. In a skillet, heat ½ Tbsp. of cooking fat and sauté the sweet potato for about 5 minutes.
  3. Add Brussels sprouts, red onion, garlic, and sausage to the skillet and sauté for 8-10 minutes until the sweet potatoes are cooked through.
  4. If using cheese, sprinkle it over the mixture in the skillet.
  5. In a bowl, whisk the eggs with a dash of salt and pepper.
  6. Pour the whisked eggs over the sausage and vegetable mixture, ensuring the skillet is greased well.
  7. Bake for 12-16 minutes until the center is firm.
  8. Let it set for 5 minutes before serving.
