Sweet Potato Chicken Sausage Egg Bake

Instructions
- Preheat the oven to 375°F.
- In a skillet, heat ½ Tbsp. of cooking fat and sauté the sweet potato for about 5 minutes.
- Add Brussels sprouts, red onion, garlic, and sausage to the skillet and sauté for 8-10 minutes until the sweet potatoes are cooked through.
- If using cheese, sprinkle it over the mixture in the skillet.
- In a bowl, whisk the eggs with a dash of salt and pepper.
- Pour the whisked eggs over the sausage and vegetable mixture, ensuring the skillet is greased well.
- Bake for 12-16 minutes until the center is firm.
- Let it set for 5 minutes before serving.
