Sweet Potato, Kale, and Sausage Bake with White Cheese Sauce

Ingredients

  • 2 teaspoons olive oil
  • 2 medium sweet potatoes, peeled and cubed
  • 16 ounces Italian pork or chicken sausage, cut into small rounds
  • 2 cups low sodium chicken broth
  • 3/4 cup milk
  • 1/4 cup flour
  • 3/4 cup shredded Gruyere cheese
  • 2 cups finely chopped kale

Instructions

  1. 1. Heat olive oil in a large pan over high heat, add sweet potatoes and sausage, and brown them.
  2. 2. Toss in the kale and transfer the mixture to a greased baking dish.
  3. 3. Preheat the oven to 350°F.
  4. 4. In a separate pot, bring chicken broth and half the milk to a low boil.
  5. 5. Whisk flour with the remaining milk to form a paste, then add to the broth and whisk until smooth.
  6. 6. Stir in a quarter cup of Gruyere cheese until melted.
  7. 7. Pour the cheese sauce over the sweet potato mixture in the baking dish, top with remaining cheese, and bake for 10 minutes until bubbly.
