Six Ingredient Sausage Potato Pie

Instructions
- 1. Preheat the oven to 350°F and line a pie pan with parchment paper.
- 2. Brown the sausage in a pan until fully cooked and crumbled, then remove from heat to cool slightly.
- 3. In a bowl, whisk together the eggs, milk, Herbes de Provence, salt, and pepper.
- 4. Add the shredded potatoes, 2/3 cup of cheese, kale, and the cooked sausage to the egg mixture and combine well.
- 5. Transfer the mixture to the prepared pie pan, topping with the remaining cheese.
- 6. Cover loosely with foil and bake for 30 minutes or until set. If using shredded potatoes, bake longer if needed.
- 7. Remove the foil, increase the oven temperature to 400-450°F, and bake for an additional 10 minutes until golden brown on top.
- 8. Let the pie stand for 10 minutes to absorb excess moisture, then cut into slices and serve.
