Steamed Buns (Mantou)

Ingredients

  • 1 cup milk
  • 1 teaspoon active dry yeast
  • 2 ½ tablespoons sugar
  • 350 g all-purpose flour

Instructions

  1. Combine milk, yeast, and sugar in a stand mixer bowl and stir.
  2. Add flour to the mixture and knead until a smooth dough forms, about 6 minutes.
  3. Transfer the dough, cover it with plastic wrap, and let it rest for 5 minutes.
  4. Roll out the dough into a 14x10 inch rectangle on a floured surface.
  5. Roll the dough into a log tightly from left to right.
  6. Roll out the log until it is about 12 inches long and smooth.
  7. Cut the log into 8 equal pieces and place each on parchment paper.
  8. Place the pieces in a steamer and let them rise for 60 minutes.
  9. Add water to the steamer and optionally add vinegar for whiter buns.
  10. Steam the buns on high heat for 10-12 minutes until fluffy.
