Steamed Buns (Mantou)

Instructions
- Combine milk, yeast, and sugar in a stand mixer bowl and stir.
- Add flour to the mixture and knead until a smooth dough forms, about 6 minutes.
- Transfer the dough, cover it with plastic wrap, and let it rest for 5 minutes.
- Roll out the dough into a 14x10 inch rectangle on a floured surface.
- Roll the dough into a log tightly from left to right.
- Roll out the log until it is about 12 inches long and smooth.
- Cut the log into 8 equal pieces and place each on parchment paper.
- Place the pieces in a steamer and let them rise for 60 minutes.
- Add water to the steamer and optionally add vinegar for whiter buns.
- Steam the buns on high heat for 10-12 minutes until fluffy.
