Ingredients

  • ½ tablespoon yeast
  • 100 ml warm water
  • ½ teaspoon sugar
  • 75 g sweet potato
  • 250 g all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon oil
  • 1 tablespoon oil

Instructions

  1. Combine yeast, sugar, and warm water in a bowl and let it sit for 20 minutes until foamy.
  2. Steam the sweet potato until soft, then mash it into a fine purée.
  3. In a stand mixer, combine the yeast mixture, sweet potato purée, flour, sugar, and oil, and knead until the dough is soft and shiny.
  4. Let the dough rest for 5 minutes, then roll it out into a rectangle and form it into a log.
  5. Cut the log into 8 equal pieces and place each piece on parchment paper.
  6. Let the dough balls rise for 60 minutes until expanded.
  7. Steam the dough balls for 10-12 minutes until soft and fluffy.
  8. Serve warm.
