Instructions
- Combine yeast, sugar, and warm water in a bowl and let it sit for 20 minutes until foamy.
- Steam the sweet potato until soft, then mash it into a fine purée.
- In a stand mixer, combine the yeast mixture, sweet potato purée, flour, sugar, and oil, and knead until the dough is soft and shiny.
- Let the dough rest for 5 minutes, then roll it out into a rectangle and form it into a log.
- Cut the log into 8 equal pieces and place each piece on parchment paper.
- Let the dough balls rise for 60 minutes until expanded.
- Steam the dough balls for 10-12 minutes until soft and fluffy.
- Serve warm.
