Instructions
- Preheat the oven to 375°F.
- Cream the butter and sugar together until well combined.
- Add the vanilla, peanut butter, mashed bananas, and eggs, and cream until just combined.
- In a separate bowl, mix the flour, oats, baking soda, and cinnamon.
- Add the buttermilk and the flour mixture alternately to the butter/banana mixture, mixing gently.
- Fold in the chocolate chips without overmixing.
- For the streusel, combine flour, sugar, and cinnamon, then cut in the butter and add water to form crumbs.
- Spoon the batter into a greased muffin tin, filling each cup about ¾ full, and top with streusel.
- Bake for 11-15 minutes until golden brown and springy to the touch.
