Ingredients

The muffins

  • 6 tablespoons soft butter
  • cup sugar
  • ½ teaspoon vanilla
  • 2 tablespoons peanut butter
  • 6 small or 3 large bananas, mashed
  • 3 large eggs
  • ¾ cup buttermilk
  • cups whole wheat flour
  • ¼ cup quick cooking oats
  • teaspoons baking soda
  • pinch cinnamon
  • ¾ cup chocolate chips

The streusel topping

  • 4 tablespoons butter, chilled
  • 1 tablespoon water
  • ¾ cup whole wheat flour
  • ¾ cup sugar
  • pinch cinnamon

Instructions

  1. Preheat the oven to 375°F.
  2. Cream the butter and sugar together until well combined.
  3. Add the vanilla, peanut butter, mashed bananas, and eggs, and cream until just combined.
  4. In a separate bowl, mix the flour, oats, baking soda, and cinnamon.
  5. Add the buttermilk and the flour mixture alternately to the butter/banana mixture, mixing gently.
  6. Fold in the chocolate chips without overmixing.
  7. For the streusel, combine flour, sugar, and cinnamon, then cut in the butter and add water to form crumbs.
  8. Spoon the batter into a greased muffin tin, filling each cup about ¾ full, and top with streusel.
  9. Bake for 11-15 minutes until golden brown and springy to the touch.
