Berry Parfait Yogurt Popsicles

Ingredients

The fruit

  • 3 cups fresh or frozen fruit, roughly chopped if large (strawberries, cherries, blueberries, raspberries, peaches, blackberries, plums)
  • 2-4 tablespoons honey, maple syrup, or agave

The yogurt mixture

  • 1 teaspoon pure vanilla extract
  • 1 ½ cups plain Greek yogurt
  • ¼ cup milk (any kind, dairy/non-dairy)

The granola

  • cup prepared granola

Instructions

  1. Cook the fruit with honey in a saucepan until it reaches a thick, jammy consistency.
  2. Remove from heat, stir in vanilla extract, and let cool.
  3. Mix Greek yogurt, milk, and honey in a bowl, adjusting sweetness to taste.
  4. Coat granola with a portion of the yogurt mixture.
  5. Layer yogurt, granola, and fruit in popsicle molds, tapping to remove air pockets.
  6. Insert popsicle sticks and freeze until solid, about 6 hours or overnight.
  7. Run molds under hot water briefly to unmold and enjoy.
