The binding mixture

Instructions
- Preheat the oven to 350ºF and line a large baking sheet with parchment paper.
- Whip the aquafaba and cream of tartar in a bowl until stiff peaks form.
- Add vanilla extract and brown sugar to the whipped aquafaba and mix until combined.
- In a separate bowl, combine rolled oats, oat bran, ground flaxseed, almonds, pepitas, cinnamon, turmeric, ground ginger, and ground cloves.
- Pour the dry mixture into the bowl with the whipped aquafaba and stir until well coated.
- Spread the granola mixture evenly on the prepared baking sheet.
- Bake for 20 minutes, stir gently, then bake for an additional 10 minutes and stir again.
- Bake for another 5 minutes or until the granola is dry and golden brown.
- Allow the granola to cool completely before storing in an airtight container.
