Ingredients

The granola base

  • 2 cups rolled oats
  • ¼ cup oat bran
  • ¼ cup ground flaxseed
  • ¼ cup slivered almonds
  • ¼ cup pepitas
  • ½ tsp cinnamon
  • ½ tsp turmeric
  • ¼ tsp ground ginger
  • tsp ground cloves

The binding mixture

  • ½ cup aquafaba
  • tsp cream of tartar
  • ¼ cup brown sugar
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 350ºF and line a large baking sheet with parchment paper.
  2. Whip the aquafaba and cream of tartar in a bowl until stiff peaks form.
  3. Add vanilla extract and brown sugar to the whipped aquafaba and mix until combined.
  4. In a separate bowl, combine rolled oats, oat bran, ground flaxseed, almonds, pepitas, cinnamon, turmeric, ground ginger, and ground cloves.
  5. Pour the dry mixture into the bowl with the whipped aquafaba and stir until well coated.
  6. Spread the granola mixture evenly on the prepared baking sheet.
  7. Bake for 20 minutes, stir gently, then bake for an additional 10 minutes and stir again.
  8. Bake for another 5 minutes or until the granola is dry and golden brown.
  9. Allow the granola to cool completely before storing in an airtight container.
