Chai Tea Latte

Ingredients

The base

  • 2 cups coconut milk
  • 1 cup water

The spices

  • 2 pieces star anise
  • 2 teaspoons ginger, grated or finely chopped
  • 2 short cinnamon sticks, crumbled
  • 7 pieces cardamom pods, crushed

The tea

  • 2 bags black tea

The sweetener

  • 3 packets sweetener (stevia, Splenda, or 2 tablespoons sugar)

Optional toppings

  • 6 tablespoons fat-free whipped topping
  • 1 teaspoon freshly grated nutmeg

Instructions

  1. Crush the star anise, cinnamon sticks, and cardamom pods, and chop the ginger.
  2. In a medium saucepan, bring the water and crushed spices to a boil, then simmer for 5-8 minutes.
  3. Turn off the heat, add the tea bags, and steep for 2-3 minutes.
  4. Add the coconut milk to the tea, bring to a boil, then turn off the heat.
  5. Strain the mixture and serve hot, optionally topped with whipped cream and grated nutmeg.
