Spicy Chai Latte

Ingredients

The chai mixture

  • 4 bags Black Tea
  • 1 cup Milk
  • 2 inches Fresh Ginger, cut into pieces
  • 1 tsp Cloves
  • 1 tsp Cardamom Seeds
  • 1 tsp Black Peppercorns
  • 3 sticks Cinnamon
  • 1 tsp Ground Nutmeg
  • 1 piece Star Anise (optional)

Sweetener

  • 1 Tbsp Muscavado/Brown Sugar or Honey

Instructions

  1. Crush the peppercorns, cloves, and cardamom in a small bag using a heavy mallet or skillet.
  2. In a saucepan, heat the milk with the crushed spices, cinnamon sticks, ginger, and nutmeg until it gently boils, then cover and steep for 15 minutes.
  3. Boil water and steep the tea bags in 2 cups of boiling water for 4 minutes, then discard the bags.
  4. Strain the spiced milk through a fine mesh sieve into a pitcher, add the tea, and sweeten each cup with muscavado sugar or honey before serving.
