Instructions
- Heat almond milk, heavy cream, cinnamon, nutmeg, and ginger in a saucepan over medium heat.
- Separate the egg yolks and egg whites into two bowls.
- Whisk the egg yolks with the sweetener for one minute to avoid clumping.
- Add the egg yolks to the saucepan and stir continuously until heated to 170 degrees.
- Beat the egg whites with a mixer, adding a tablespoon of sweetener to create meringue, then fold it into the warm mixture.
- Remove from heat and transfer to a pitcher, then chill in the fridge for at least 1 hour.
- Serve chilled, optionally with whipped cream.
