Ingredients

The eggnog

  • 2 cups unsweetened almond milk
  • 1 cup heavy cream
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger (ground or paste)
  • 4 units eggs
  • cup zero-calorie sweetener
  • 1 tablespoon zero-calorie sweetener
  • 1 cinnamon stick optional garnish

Homemade whipped cream (optional)

  • ½ cup heavy whipping cream
  • 1 tablespoon sweetener

Instructions

  1. Heat almond milk, heavy cream, cinnamon, nutmeg, and ginger in a saucepan over medium heat.
  2. Separate the egg yolks and egg whites into two bowls.
  3. Whisk the egg yolks with the sweetener for one minute to avoid clumping.
  4. Add the egg yolks to the saucepan and stir continuously until heated to 170 degrees.
  5. Beat the egg whites with a mixer, adding a tablespoon of sweetener to create meringue, then fold it into the warm mixture.
  6. Remove from heat and transfer to a pitcher, then chill in the fridge for at least 1 hour.
  7. Serve chilled, optionally with whipped cream.
