Instructions
- Beat the egg yolks with the sweetener until light yellow and dissolved.
- In a saucepan, combine almond milk, cream, cinnamon, and nutmeg; bring to a gentle boil and remove from heat.
- Slowly pour the hot milk mixture into the egg yolks while whisking constantly to temper the yolks.
- Return the mixture to the saucepan and heat, whisking constantly until it thickens or reaches 160°F.
- If desired, stir in bourbon at this stage.
- Transfer the eggnog to a pitcher and refrigerate for at least 3-4 hours until cold.
- Serve with a sprinkle of cinnamon and nutmeg, and optionally with sugar-free whipped cream.
