Sugar-Free Keto Eggnog

Ingredients

  • 6 large Egg yolks
  • cup Besti Powdered Monk Fruit Allulose Blend
  • 1 ½ cups Unsweetened almond milk
  • 1 ½ cups Heavy cream
  • ½ tsp Nutmeg
  • ½ tsp Cinnamon
  • 1 cup Bourbon (optional)
  • 1 tsp Vanilla extract

Instructions

  1. Beat the egg yolks with the sweetener until light yellow and dissolved.
  2. In a saucepan, combine almond milk, cream, cinnamon, and nutmeg; bring to a gentle boil and remove from heat.
  3. Slowly pour the hot milk mixture into the egg yolks while whisking constantly to temper the yolks.
  4. Return the mixture to the saucepan and heat, whisking constantly until it thickens or reaches 160°F.
  5. If desired, stir in bourbon at this stage.
  6. Transfer the eggnog to a pitcher and refrigerate for at least 3-4 hours until cold.
  7. Serve with a sprinkle of cinnamon and nutmeg, and optionally with sugar-free whipped cream.
