Homemade Eggnog

Ingredients

The base

  • 8 large egg yolks
  • ¾ cup granulated sugar
  • ½ cup heavy whipping cream
  • 1 ½ cup whole milk
  • 12 ounce evaporated milk

The spices

  • ½ teaspoon ground nutmeg
  • ¼ teaspoon cinnamon
  • 4 whole cloves
  • teaspoon sea salt

The flavorings

  • 1 teaspoon pure vanilla extract
  • additional optional nutmeg or cinnamon stick for topping

Instructions

  1. Whisk the egg yolks and sugar together until combined.
  2. In a medium saucepan, heat the cream, whole milk, evaporated milk, nutmeg, cinnamon, cloves, and sea salt until it starts to simmer.
  3. Slowly add the milk mixture to the egg and sugar mixture, whisking continuously until combined.
  4. Return the mixture to the saucepan and whisk constantly until it slightly thickens, then remove from heat.
  5. Stir in the vanilla extract.
  6. Pour the eggnog into a pitcher and garnish with nutmeg and cinnamon sticks if desired.
  7. Store in the fridge for up to one week.
