Ingredients

The base

  • 4 egg yolks egg yolks
  • 3 tablespoons maple syrup
  • 3 cups unsweetened oat milk

The spices

  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon vanilla extract

Instructions

  1. Whisk the egg yolks and maple syrup together in a medium mixing bowl and set aside.
  2. In a large saucepan, combine the oat milk, cinnamon, nutmeg, and vanilla, and heat over medium until it simmers.
  3. Gradually add a few tablespoons of the hot oat milk to the egg mixture while whisking to temper the eggs.
  4. Continue adding more hot oat milk to the egg mixture, stirring continuously.
  5. Reduce the heat to low and slowly pour the egg mixture into the oat milk, stirring constantly.
  6. Allow the mixture to simmer gently, then turn off the heat.
  7. Transfer the eggnog to a pitcher and serve warm or chilled, with additional nutmeg on top if desired.
