Instructions
- Whisk the egg yolks and maple syrup together in a medium mixing bowl and set aside.
- In a large saucepan, combine the oat milk, cinnamon, nutmeg, and vanilla, and heat over medium until it simmers.
- Gradually add a few tablespoons of the hot oat milk to the egg mixture while whisking to temper the eggs.
- Continue adding more hot oat milk to the egg mixture, stirring continuously.
- Reduce the heat to low and slowly pour the egg mixture into the oat milk, stirring constantly.
- Allow the mixture to simmer gently, then turn off the heat.
- Transfer the eggnog to a pitcher and serve warm or chilled, with additional nutmeg on top if desired.
