Skinny Eggnog

Instructions
- Heat 2½ cups of milk in a medium saucepan.
- Split the vanilla bean lengthwise, scrape out the seeds, and add both seeds and pod to the saucepan; simmer over medium heat.
- In a large bowl, whisk the eggs, sugar, and cornstarch until light yellow.
- Temper the eggs by gradually pouring the hot milk mixture into the egg mixture, whisking constantly.
- Pour the mixture back into the pan and stir constantly over medium heat until it thickens, about 6-7 minutes.
- Remove from heat, stir in the remaining ½ cup milk to stop cooking, and remove the vanilla pod.
- Let it cool, transfer to a pitcher, and chill until ready to serve.
- Spike with liquor if desired and garnish with nutmeg.
