Skinny Eggnog

Ingredients

The base

  • 3 cups 1% milk
  • 1 unit vanilla bean
  • 2 large eggs
  • cup sugar
  • 1 tsp cornstarch
  • to taste unit freshly grated nutmeg

Optional alcohol

  • to taste unit spiced rum or bourbon

Instructions

  1. Heat 2½ cups of milk in a medium saucepan.
  2. Split the vanilla bean lengthwise, scrape out the seeds, and add both seeds and pod to the saucepan; simmer over medium heat.
  3. In a large bowl, whisk the eggs, sugar, and cornstarch until light yellow.
  4. Temper the eggs by gradually pouring the hot milk mixture into the egg mixture, whisking constantly.
  5. Pour the mixture back into the pan and stir constantly over medium heat until it thickens, about 6-7 minutes.
  6. Remove from heat, stir in the remaining ½ cup milk to stop cooking, and remove the vanilla pod.
  7. Let it cool, transfer to a pitcher, and chill until ready to serve.
  8. Spike with liquor if desired and garnish with nutmeg.
