Simple Tuna Fish Sandwich

Ingredients

The filling

  • ¼ cup 0% fat greek plain yogurt
  • 1 tsp Dijon Mustard
  • 1 tbsp Old Style whole grain mustard
  • ¼ tsp black pepper
  • 1 rib celery, finely chopped
  • 1 green onion finely chopped
  • 1 pinch cayenne pepper
  • 1 tsp lemon juice
  • 1 can chunk light tuna fish, in water

The sandwich

  • 2 slices whole grain bread of your choice
  • 1 handful leafy greens

Instructions

  1. Mix all ingredients except tuna in a small bowl until well blended.
  2. Stir in the drained tuna and mix well.
  3. Spread the mixture onto one slice of bread.
  4. Garnish with leafy greens and top with the second slice of bread.
  5. Serve immediately.
