BBQ Chicken Salad

Ingredients

The Chicken

  • 3 pounds boneless, skinless chicken breasts
  • 32 ounces chicken broth or chicken stock
  • 2 ¼ pounds cooked chicken (optional)

The Salad

  • 1 tablespoon BBQ dry rub
  • ½ cup mayonnaise
  • ½ cup BBQ sauce
  • 1 cup finely diced celery
  • ½ cup finely minced sweet onion
  • 1 teaspoon freshly ground black pepper
  • to taste salt

Instructions

  1. If using raw chicken, place chicken in a skillet and cover with chicken broth.
  2. Bring to a boil over medium-high heat, then reduce heat and simmer for 20 to 25 minutes until cooked through.
  3. Remove chicken and shred it.
  4. In a large bowl, combine shredded chicken with dry rub, mayonnaise, BBQ sauce, celery, onion, pepper, and salt.
  5. Stir well and add reserved chicken broth until desired creaminess is achieved.
  6. Sprinkle additional dry rub if desired.
  7. Serve immediately or refrigerate for at least 30 minutes before serving.
