BBQ Chicken Salad

The Salad

BBQ dry rub

mayonnaise

BBQ sauce

finely diced celery

finely minced sweet onion

freshly ground black pepper

Instructions
- If using raw chicken, place chicken in a skillet and cover with chicken broth.
- Bring to a boil over medium-high heat, then reduce heat and simmer for 20 to 25 minutes until cooked through.
- Remove chicken and shred it.
- In a large bowl, combine shredded chicken with dry rub, mayonnaise, BBQ sauce, celery, onion, pepper, and salt.
- Stir well and add reserved chicken broth until desired creaminess is achieved.
- Sprinkle additional dry rub if desired.
- Serve immediately or refrigerate for at least 30 minutes before serving.
