Grilled Harissa Lamb Chops

Ingredients

The lamb chops

  • 8 pieces lamb loin chops on the bone, about 3-½ ounces each, all fat trimmed off

The marinade

  • 2 tbsp fresh lemon juice
  • 4 cloves garlic, crushed
  • ¾ tsp ground cumin
  • 2 tbsp prepared Harissa
  • to taste kosher salt
  • to taste fresh ground pepper

Instructions

  1. Place the lamb chops in a large bowl and squeeze the lemon juice over them.
  2. Add the crushed garlic, cumin, Harissa, and season with salt and pepper.
  3. Cover with plastic wrap and marinate for at least 1 hour, or overnight.
  4. Preheat the grill or grill pan to medium-high heat and spray with oil.
  5. Grill the chops for about 4 to 6 minutes on each side until the internal temperature reaches 145°F for medium-rare.
