Grilled Lamb Chops

The marinade

Creole seasoning (or replace with paprika)
Instructions
- Season the lamb chops with salt and pepper and set aside.
- Blend the rosemary, garlic, Creole seasoning or paprika, thyme, and white pepper in a food processor or mortar and pestle.
- Rub the herb mixture evenly over the lamb chops.
- Marinate the chops in an airtight container in the fridge for at least 1 hour or overnight for best results.
- Bring the lamb chops to room temperature before grilling.
- Heat the grill or cast-iron grill pan until hot.
- Grill the lamb chops for 3½-5 minutes per side until browned to your desired doneness.
- Let the lamb chops rest for about 10 minutes before serving.
