Ingredients

The lamb chops

  • 6 pieces lamb chops, about ¾-inch thick

The marinade

  • 1 tablespoon fresh rosemary
  • 2 large cloves garlic, crushed
  • 1 teaspoon fresh thyme
  • 1 teaspoon white pepper
  • to taste none Creole seasoning (or replace with paprika)

Instructions

  1. Season the lamb chops with salt and pepper and set aside.
  2. Blend the rosemary, garlic, Creole seasoning or paprika, thyme, and white pepper in a food processor or mortar and pestle.
  3. Rub the herb mixture evenly over the lamb chops.
  4. Marinate the chops in an airtight container in the fridge for at least 1 hour or overnight for best results.
  5. Bring the lamb chops to room temperature before grilling.
  6. Heat the grill or cast-iron grill pan until hot.
  7. Grill the lamb chops for 3½-5 minutes per side until browned to your desired doneness.
  8. Let the lamb chops rest for about 10 minutes before serving.
