Ingredients

The lamb chops

  • 1 ½ pounds lamb chops

The marinade

  • ¼ cup olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon cracked black pepper
  • 1 tablespoon shallots, minced
  • 1 tablespoon garlic, minced
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon thyme, chopped
  • 1 tablespoon parsley, chopped

Instructions

  1. Combine the seasonings and fresh herbs with olive oil in a small bowl.
  2. Transfer the mixture to a medium-sized baking dish suitable for marinating the lamb chops.
  3. Pat the lamb chops dry with paper towels before adding them to the marinade.
  4. Marinate the lamb chops for 20 minutes, then turn them over and marinate for another 20 minutes.
  5. Heat a large skillet over medium-high heat and add the marinated lamb chops.
  6. Sear the lamb chops for about 2 minutes on each side for medium rare.
  7. Serve the lamb chops with your choice of sides.
