Lamb shoulder chops
Instructions
- Combine olive oil, lemon juice, garlic, rosemary, thyme, mint, onion powder, sea salt, black pepper, and crushed red pepper flakes in a bowl to make the marinade.
- Pat the lamb chops dry and place them in a zip lock bag. Pour the marinade over the chops and coat well. Marinate for 30-60 minutes at room temperature.
- Heat the remaining olive oil in a large cast iron skillet over medium-high heat. Add the lamb chops and sear for 5-7 minutes, flipping every 30-60 seconds until they reach the desired doneness.
- Transfer the chops to a plate or cutting board and let them rest for 5 minutes before serving.
