Ingredients

The marinade

  • 6 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 4 cloves Garlic
  • 1 tbsp Fresh rosemary
  • 1 tbsp Fresh thyme
  • ½ tbsp Fresh mint
  • 2 tsp Onion powder
  • 1 tsp Sea salt
  • ¼ tsp Black pepper
  • ¼ tsp Crushed red pepper flakes

The main ingredient

  • 4 8-oz Lamb shoulder chops

Instructions

  1. Combine olive oil, lemon juice, garlic, rosemary, thyme, mint, onion powder, sea salt, black pepper, and crushed red pepper flakes in a bowl to make the marinade.
  2. Pat the lamb chops dry and place them in a zip lock bag. Pour the marinade over the chops and coat well. Marinate for 30-60 minutes at room temperature.
  3. Heat the remaining olive oil in a large cast iron skillet over medium-high heat. Add the lamb chops and sear for 5-7 minutes, flipping every 30-60 seconds until they reach the desired doneness.
  4. Transfer the chops to a plate or cutting board and let them rest for 5 minutes before serving.
