Ingredients

The lamb chops

  • 8 pieces lamb loin chops, trimmed of fat

The marinade

  • 6 cloves garlic, crushed
  • 1 tsp extra-virgin olive oil
  • ¼ cup fresh lemon juice
  • 1 tbsp fresh rosemary leaves
  • tsp kosher salt
  • to taste fresh ground pepper

Instructions

  1. Combine olive oil, lemon juice, garlic, and rosemary in a small bowl.
  2. Season the lamb with salt and pepper, then cover with the marinade.
  3. Marinate the lamb for at least 1 hour, preferably overnight.
  4. Discard the marinade before grilling.
  5. Grill the lamb over medium-high heat for about 5 minutes on each side, or broil in the oven.
