Grilled Lamb Chops

Ingredients

Marinade

  • ¼ cup Olive oil
  • 1 tbsp Lemon juice
  • 6 cloves Garlic (crushed)
  • 1 tbsp Fresh mint (chopped)
  • 1 tbsp Fresh parsley (chopped)
  • 1 tbsp Fresh dill (chopped)
  • 2 tsp Sea salt
  • ½ tsp Black pepper

Lamb Chops

  • 8 medium Lamb chops (~1.5 pounds after trimming excess fat and connective tissue)

Instructions

  1. Whisk together the marinade ingredients in a large bowl.
  2. Add the lamb chops and coat them in the marinade. Cover and marinate for 30-60 minutes at room temperature or refrigerate for longer.
  3. Preheat the grill to medium-high heat (400 to 450 degrees F).
  4. Grill the lamb chops for 1-3 minutes per side for medium rare, 2-4 minutes for medium, or 3-5 minutes for medium well.
  5. Remove from the grill and let the chops rest for 5 minutes before serving.
