Ingredients

The lamb chops

  • 1 pound lamb chops
  • 2 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon sea salt
  • 1 teaspoon cracked black pepper
  • 1 clove garlic
  • 1 teaspoon lemon zest

The mint pesto

  • ½ cup mint
  • ¼ cup Italian parsley
  • 1 clove garlic
  • ½ teaspoon lemon zest
  • 1 tablespoon salted roasted almonds
  • to taste sea salt

Instructions

  1. Mix the marinade ingredients in a small bowl.
  2. Place the lamb chops in a sealable plastic bag and pour the marinade over them, ensuring they are well coated.
  3. Marinate the lamb chops for 1 hour.
  4. Preheat the grill to high heat.
  5. Grill the lamb chops for 3 to 4 minutes on each side for medium-rare.
  6. For the mint pesto, combine mint leaves and parsley in a food processor and pulse until chopped.
  7. Add lemon zest, almonds, and garlic to the processor and pulse again.
  8. With the machine running, stream in the Extra Virgin Olive Oil and process until smooth.
  9. Season the pesto with sea salt to taste.
