Instructions
- Mix the marinade ingredients in a small bowl.
- Place the lamb chops in a sealable plastic bag and pour the marinade over them, ensuring they are well coated.
- Marinate the lamb chops for 1 hour.
- Preheat the grill to high heat.
- Grill the lamb chops for 3 to 4 minutes on each side for medium-rare.
- For the mint pesto, combine mint leaves and parsley in a food processor and pulse until chopped.
- Add lemon zest, almonds, and garlic to the processor and pulse again.
- With the machine running, stream in the Extra Virgin Olive Oil and process until smooth.
- Season the pesto with sea salt to taste.
