Broiled Lamb Chops with Mint Chimichurri Sauce

The Lamb Chops
-
4–5
pieces
bone-in lamb chops (1 ½ to 2 inches thick)

fresh mint for garnish
Instructions
- Make the mint chimichurri sauce by blending parsley, mint, pepper, garlic, lime, and honey in a food processor.
- While blending, slowly add olive oil and season with salt and pepper to taste.
- Marinate the lamb chops in ½ cup of the chimichurri sauce for at least 1 hour or up to 24 hours, reserving some for later.
- Preheat the broiler for 5 minutes and position the oven rack 6 inches below it.
- Place the lamb on a baking sheet or broiling pan and broil for 4-6 minutes per side until desired doneness.
- Brush with extra chimichurri sauce halfway through cooking if desired.
- Let the lamb chops rest for 5 minutes before serving.
- Serve with remaining mint chimichurri sauce and garnish with fresh mint if desired.
