Broiled Lamb Chops with Mint Chimichurri Sauce

Ingredients

The Mint Chimichurri Sauce

  • 1 ½ cups flat-leaf parsley, torn
  • 1 cup mint leaves with the stem
  • 2 teaspoons serrano or jalapeno pepper
  • 2 cloves garlic
  • ½ lime juiced
  • 1 tablespoon honey or agave nectar
  • ½ cup olive oil
  • to taste kosher salt
  • to taste pepper

The Lamb Chops

  • 4–5 pieces bone-in lamb chops (1 ½ to 2 inches thick)
  • as desired fresh mint for garnish

Instructions

  1. Make the mint chimichurri sauce by blending parsley, mint, pepper, garlic, lime, and honey in a food processor.
  2. While blending, slowly add olive oil and season with salt and pepper to taste.
  3. Marinate the lamb chops in ½ cup of the chimichurri sauce for at least 1 hour or up to 24 hours, reserving some for later.
  4. Preheat the broiler for 5 minutes and position the oven rack 6 inches below it.
  5. Place the lamb on a baking sheet or broiling pan and broil for 4-6 minutes per side until desired doneness.
  6. Brush with extra chimichurri sauce halfway through cooking if desired.
  7. Let the lamb chops rest for 5 minutes before serving.
  8. Serve with remaining mint chimichurri sauce and garnish with fresh mint if desired.
