Instructions
- Prepare the marinade by mixing olive oil, salt, pepper, and dried oregano in a medium bowl.
- Add the lamb chops to the marinade, toss to coat, and let them sit for up to 45 minutes.
- Before cooking, whisk together ¼ cup olive oil and the juice of one lemon in a small bowl.
- Set aside some fresh oregano or rosemary to use as a brush with the olive oil and lemon mixture.
- Heat a cast iron pan over medium-high heat.
- Add the lamb chops to the hot pan, cooking 4 at a time to avoid crowding.
- Cook the chops for 3 minutes on one side, then flip and cook for 2 minutes.
- Baste the chops with the fresh herb brush dipped in the olive oil and lemon mixture, then flip again and cook for an additional 2 minutes or until desired doneness.
- Remove the cooked lamb chops to a plate and repeat with the remaining chops.
- Serve the lamb chops topped with a squeeze of fresh lemon juice and additional fresh herbs if desired.
