Ingredients

Marinade

  • ½ cup olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • ¾ tsp dried oregano

Lamb Chops

  • 8 small lamb loin or rib chops
  • ¼ cup olive oil
  • 1 juice lemon
  • 1 bunch fresh oregano or rosemary

Instructions

  1. Prepare the marinade by mixing olive oil, salt, pepper, and dried oregano in a medium bowl.
  2. Add the lamb chops to the marinade, toss to coat, and let them sit for up to 45 minutes.
  3. Before cooking, whisk together ¼ cup olive oil and the juice of one lemon in a small bowl.
  4. Set aside some fresh oregano or rosemary to use as a brush with the olive oil and lemon mixture.
  5. Heat a cast iron pan over medium-high heat.
  6. Add the lamb chops to the hot pan, cooking 4 at a time to avoid crowding.
  7. Cook the chops for 3 minutes on one side, then flip and cook for 2 minutes.
  8. Baste the chops with the fresh herb brush dipped in the olive oil and lemon mixture, then flip again and cook for an additional 2 minutes or until desired doneness.
  9. Remove the cooked lamb chops to a plate and repeat with the remaining chops.
  10. Serve the lamb chops topped with a squeeze of fresh lemon juice and additional fresh herbs if desired.
