Grilled Apple, Cheddar, and Mustard Sandwich

Instructions
- 1. Heat a cast iron skillet or grill pan to medium.
- 2. If using mayonnaise, mix it with the softened butter in a small bowl.
- 3. Spread the butter mixture on one side of each slice of bread.
- 4. On the unbuttered side of one slice, spread mustard, then layer with one slice of cheese, apple slices, and another slice of cheese.
- 5. Top with the second slice of bread, buttered side up.
- 6. Fry the sandwich on both sides until the cheese melts and the bread is golden brown, about 2 to 4 minutes per side.
