Apple, Cheddar, Bacon & Arugula Grilled Cheese

The arugula mixture

Instructions
- Toss arugula, olive oil, salt, and pepper together in a bowl and set aside.
- Heat a large skillet over medium heat.
- Spread softened butter on one side of each slice of bread.
- Place one slice of bread in the skillet, butter side down, and sprinkle ¼ cup of cheddar on top.
- Lay three slices of bacon on the cheddar, followed by half of the arugula.
- Sprinkle another ¼ cup of cheddar over the arugula and top with another slice of bread, butter side up.
- Press down on the sandwich and cook for 3-4 minutes until browned.
- Carefully flip the sandwich and cook for another 2-3 minutes until browned and cheese is melted.
- Repeat with remaining ingredients to make the second sandwich.
- Slice both sandwiches in half and serve hot.
