Grilled Cheese with Curried Apple Chutney

good, bakery style bread

mayonnaise

neutral oil such as canola or grapeseed

curried apple chutney

Instructions
- Combine all chutney ingredients except lemon and cilantro in a saucepan, bring to a boil, then simmer for 20 minutes.
- Mash the apples in the chutney, stir, cover, and continue cooking for another 10 minutes until thickened.
- Add lemon juice and minced cilantro to the chutney, adjust seasoning, and refrigerate once cooled.
- Preheat oven to 400°F and heat an oven-proof skillet over medium-high heat.
- Spread mayonnaise on one side of each bread slice and add oil to the skillet.
- Cook bread mayonnaise side down until golden, then spread chutney on the non-toasted side.
- Top with grated cheese, return to skillet, and bake until cheese melts (5-7 minutes).
- Press the two slices together, cut diagonally, and let cool briefly before serving.
