Grilled Cheese with Curried Apple Chutney

Ingredients

Chutney

  • 2 large apples, peeled, cored, and roughly chopped
  • 1 small onion, thinly sliced
  • ¼ cup apple cider vinegar
  • ¼ cup sugar
  • 1 zest orange
  • 1 teaspoon curry powder
  • pinch kosher salt
  • pinch red pepper flakes to taste
  • 1 leaf bay leaf
  • 1 inch knob fresh ginger, peeled and minced
  • 1 half lemon
  • small handful cilantro, minced

Grilled Cheese

  • 2 slices good, bakery style bread
  • mayonnaise
  • 2 teaspoons neutral oil such as canola or grapeseed
  • 1–2 tablespoons curried apple chutney
  • Gouda, grated

Instructions

  1. Combine all chutney ingredients except lemon and cilantro in a saucepan, bring to a boil, then simmer for 20 minutes.
  2. Mash the apples in the chutney, stir, cover, and continue cooking for another 10 minutes until thickened.
  3. Add lemon juice and minced cilantro to the chutney, adjust seasoning, and refrigerate once cooled.
  4. Preheat oven to 400°F and heat an oven-proof skillet over medium-high heat.
  5. Spread mayonnaise on one side of each bread slice and add oil to the skillet.
  6. Cook bread mayonnaise side down until golden, then spread chutney on the non-toasted side.
  7. Top with grated cheese, return to skillet, and bake until cheese melts (5-7 minutes).
  8. Press the two slices together, cut diagonally, and let cool briefly before serving.
