Ingredients

The cookies

  • 1 ¼ cups gluten-free flour or white whole wheat flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • cup melted coconut oil
  • cup maple syrup
  • 1 tbsp milk
  • 1 large egg
  • 1 tsp vanilla extract

The icing

  • ¼ cup softened butter or butter substitute
  • cup maple syrup
  • ½ tsp vanilla extract

Instructions

  1. 1. Combine dry ingredients in a small bowl.
  2. 2. In a large bowl, mix melted coconut oil, maple syrup, milk, egg, and vanilla. Add dry ingredients and mix until a uniform dough forms.
  3. 3. Shape the dough into a ball, wrap in wax paper, and refrigerate for 45 minutes.
  4. 4. Preheat the oven to 350°F.
  5. 5. Roll the dough on a floured surface to a thickness of 1/8 to 1/4 inch and cut into shapes with cookie cutters.
  6. 6. Place cookies on a baking sheet and bake for about 8 minutes until the bottoms begin to brown.
  7. 7. Make the frosting by whipping the ingredients until smooth.
  8. 8. Once cookies are cool, decorate with frosting and store in an airtight container.
