Instructions
- Line a 7" springform pan with parchment paper.
- Slice the orange into ¼ inch strips.
- Combine water and honey in a skillet and bring to a simmer.
- Add orange slices to the simmering mixture and reduce to about ¼ cup of syrup over 25 minutes.
- Arrange the candied oranges in the pan.
- Boil the whole orange for about 80 minutes, then cool in cold water.
- Remove half of the peel and puree the orange in a food processor.
- Add flaxseed meal, coconut flour, coconut oil, stevia, honey, and baking soda to the processor and puree.
- Add eggs while pureeing until well combined.
- Transfer the batter to the pan with candied oranges and spread evenly.
- Bake at 350°F for 25 to 30 minutes.
- Cool the cake, remove the sides of the pan, and flip it onto a plate.
- Top with the reserved syrup if desired.
