Ingredients

Candied Oranges

  • 1 Valencia orange Valencia orange
  • 1 cup water
  • ½ cup honey
  • a pinch sea salt

Cake

  • 1 Valencia orange Valencia orange
  • ¼ cup flaxseed meal
  • ¾ cup coconut flour
  • 2 tbsp coconut oil
  • ¼ tsp vanilla liquid stevia
  • cup honey
  • 1 tsp baking soda
  • 4 eggs eggs

Instructions

  1. Line a 7" springform pan with parchment paper.
  2. Slice the orange into ¼ inch strips.
  3. Combine water and honey in a skillet and bring to a simmer.
  4. Add orange slices to the simmering mixture and reduce to about ¼ cup of syrup over 25 minutes.
  5. Arrange the candied oranges in the pan.
  6. Boil the whole orange for about 80 minutes, then cool in cold water.
  7. Remove half of the peel and puree the orange in a food processor.
  8. Add flaxseed meal, coconut flour, coconut oil, stevia, honey, and baking soda to the processor and puree.
  9. Add eggs while pureeing until well combined.
  10. Transfer the batter to the pan with candied oranges and spread evenly.
  11. Bake at 350°F for 25 to 30 minutes.
  12. Cool the cake, remove the sides of the pan, and flip it onto a plate.
  13. Top with the reserved syrup if desired.
