Christmas Cake

Ingredients

The cake

  • 1 large orange
  • 4 large eggs
  • ¾ cup agave nectar or honey
  • ½ teaspoon almond extract
  • 2 cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • 1 teaspoon baking soda

The mix-ins

  • 1 cup dried cranberries
  • ½ cup dried apricots, chopped
  • ½ cup pistachios, chopped
  • ½ cup walnuts, chopped

Instructions

  1. Boil the whole orange for 1½ hours until soft.
  2. Blend the boiled orange in a food processor until smooth.
  3. Add eggs, agave, almond extract, almond flour, salt, and baking soda to the food processor and blend until well mixed.
  4. Transfer the mixture to a bowl and stir in cranberries, apricots, pistachios, and walnuts.
  5. Pour the mixture into a greased and almond flour dusted 9-inch springform pan.
  6. Cover with tin foil if the top browns before the center is done.
  7. Bake at 350°F for 45-55 minutes, or until a knife inserted in the center comes out clean.
  8. Cool in the pan for 2 hours before serving.
