Christmas Cake

The cake

Instructions
- Boil the whole orange for 1½ hours until soft.
- Blend the boiled orange in a food processor until smooth.
- Add eggs, agave, almond extract, almond flour, salt, and baking soda to the food processor and blend until well mixed.
- Transfer the mixture to a bowl and stir in cranberries, apricots, pistachios, and walnuts.
- Pour the mixture into a greased and almond flour dusted 9-inch springform pan.
- Cover with tin foil if the top browns before the center is done.
- Bake at 350°F for 45-55 minutes, or until a knife inserted in the center comes out clean.
- Cool in the pan for 2 hours before serving.
