Ingredients

The Muffins

  • 2 cups whole wheat flour
  • 1 ½ cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cloves
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 cups pumpkin puree
  • ½ cup olive oil
  • ¼ cup real maple syrup
  • 3 tablespoons milk
  • 3 eggs

The Glaze

  • 2 tablespoons butter
  • 1 ¼ cups powdered sugar
  • 1 teaspoon vanilla
  • 1 tablespoon maple syrup
  • 1–2 tablespoons water

Instructions

  1. Preheat the oven to 350°F.
  2. Mix the dry ingredients together in one bowl.
  3. In a separate bowl, mix the wet ingredients together.
  4. Combine the dry and wet ingredients, stirring until just mixed.
  5. Fill the muffin tins with batter almost to the top.
  6. Bake for 20 minutes or until the tops spring back when pressed.
  7. Let the muffins cool before glazing.
  8. For the glaze, melt the butter and mix in the powdered sugar and vanilla.
  9. Stir in the maple syrup and add water to reach desired consistency.
