Ingredients

The muffins

  • 1 ½ cups all-purpose flour
  • cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon sea salt
  • 1 15 ounce can pumpkin puree
  • cup maple syrup
  • 1 large egg, beaten
  • ¼ cup unsalted butter, melted and cooled slightly
  • 2 teaspoons vanilla extract

The glaze

  • ½ cup confectioner's sugar
  • ¼ cup maple syrup
  • ½ teaspoon maple or vanilla extract

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with cupcake liners.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In a separate bowl, whisk together the pumpkin puree, maple syrup, egg, melted butter, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined, being careful not to overmix.
  5. Use an ice cream scoop to fill the muffin cups with the batter.
  6. Bake for 25 to 28 minutes, or until a toothpick comes out clean.
  7. Transfer the muffins to a wire rack to cool slightly.
  8. In a small bowl, whisk together the confectioner's sugar, maple syrup, and maple extract for the glaze, adjusting with water or milk as needed.
  9. Drizzle the glaze over the muffins before serving.
