Instructions
- Preheat the oven to 350°F and line a muffin tin with cupcake liners.
- In a large bowl, combine the flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt.
- In a separate bowl, whisk together the pumpkin puree, maple syrup, egg, melted butter, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined, being careful not to overmix.
- Use an ice cream scoop to fill the muffin cups with the batter.
- Bake for 25 to 28 minutes, or until a toothpick comes out clean.
