Instructions
- Preheat the oven to 375ºF and prepare a 9×9-inch baking pan.
- In a bowl, mix quick-cooking oats, oat flour, brown sugar, cold butter, and vanilla extract until crumbly for the streusel topping.
- In a separate bowl, mash the banana and mix in eggs, vanilla extract, honey, and oat milk until smooth.
- Combine the dry ingredients with the wet ingredients and fold in the blueberries.
- Transfer the mixture to the baking dish and top with the streusel.
- Cover and bake for 30 minutes, then uncover and bake for an additional 10 minutes.
- Let cool for 10 minutes before serving.
