Ingredients

Green Tea Layer

  • 1 tsp matcha green tea powder
  • cup full-fat or light coconut milk
  • 2-3 tsp agave nectar or maple syrup (or honey if not vegan)

Mango Layer

  • 1 cup fresh mango (cubed)
  • ¼ cup full-fat or light coconut milk
  • ½ medium lemon (juiced)

Instructions

  1. Prepare the green tea layer by blending coconut milk, matcha powder, and agave until smooth.
  2. Divide the mixture evenly into popsicle molds and freeze briefly.
  3. Rinse the blender and blend the mango, coconut milk, and lemon juice until creamy.
  4. Pour the mango mixture over the green tea layer, tap to remove air bubbles, and insert popsicle sticks.
  5. Freeze for at least a few hours or until completely set.
  6. Remove from molds and enjoy, storing extras in a freezer-safe bag.
